Roast Artichoke

Earthy, Golden & Dressed with Sunshine
 

There’s something grounding and celebratory about preparing artichokes. With their soft hearts and crisped edges, roasted artichokes are a true garden treasure—especially when dressed with sharp lemon and mellowed garlic. This dish is simple but feels special, like something you might serve in a sun-washed kitchen with a linen napkin and a glass of something cool.

INGREDIENTS - serves 4 as a side dish

  • 4 globe artichokes 

  • 1 lemon, halved (plus zest and juice of 1 more for the dressing)

  • 2 tbsp olive oil (plus extra for roasting)

  • 2 garlic cloves, finely grated or crushed

  • ½ tsp Dijon mustard (optional, for creaminess)

  • Sea salt & freshly ground black pepper

  • A few fresh herbs—flat-leaf parsley or mint—finely chopped

HOW TO

  • Preheat – Heat the oven to 200°C (180°C fan) or Gas Mark 6. Prepare a roasting tin with a drizzle of olive oil.

  • Prepare the artichokes

  • If using globe artichokes: Cut off the top third and trim the stem. Remove the tough outer leaves and scoop out the fuzzy choke with a spoon. Rub the cut parts with lemon as you go to prevent browning.

  • If using baby artichokes: Simply trim the tips, peel any tough outer leaves, and halve or quarter them.

  • Roast – Arrange the artichokes in the tin. Drizzle generously with olive oil, squeeze over half a lemon, and season well. Cover loosely with foil and roast for 25–30 minutes, removing the foil for the last 10 minutes to allow the edges to crisp.

  • Make the dressing – In a small bowl or jar, whisk together the remaining lemon juice and zest, 2 tbsp olive oil, garlic, mustard (if using), and a pinch of salt and pepper. Taste and adjust as needed—it should be bright and punchy.

  • Serve – Transfer the warm roasted artichokes to a plate or bowl. Drizzle with the lemon-garlic dressing and scatter with fresh herbs.

  • Fat: 14g (mostly heart-healthy olive oil)

  • Fibre: 6–7g (artichokes are beautifully fibrous)

  • Low in sugar, high in plant-based goodness

 

Artichokes take a little care, but they reward you with their nutty flavour and a real sense of occasion. Serve alongside grilled vegetables, roasted fish, or as part of a spring or summer sharing table.
