This blend is a song of the earth: crisp, woodsy rosemary mingled with coarse salt crystals that catch the light like scattered stars. A pantry treasure for roast potatoes, warm focaccia, or even sprinkled over soft cheese.
There are endless garden paths to wander—lavender, thyme, chilli, lemon zest!—but today we’re keeping it delightfully classic with this woodland favourite.
You’ll need:
• A generous handful of coarse sea salt or rock salt (the kind that looks like glimmering moon shards)
• Fresh or dried rosemary, chopped finely—bold, fragrant, and full of charm

How to Make Rosemary Salt

Blend 1 to 1½ tablespoons of finely chopped rosemary leaves (fresh or dried) with ¼ cup of coarse sea salt—chunky, glistening, and full of character. (Avoid table salt—it’s far too polite for something as wild and wonderful as this.)

Once your salt is dancing with green flecks and woodsy aroma, scoop it into a small airtight jar—as though bottling a breeze from your garden path. Store somewhere cool and dry, and it will keep its magic for up to six months.
Feel free to wander further into the herb garden: thyme, sage, or even a hint of lavender each bring their own charm. The same ratio will do—let your senses be your compass.
